Vegan Apple and Rhubarb Crumble Recipe

When I spotted rhubarb at my local farmer’s markets I knew exactly what I had to have – right away! – vegan apple and rhubarb crumble of course! This dessert is so quick and simple and has less sugar than most recipes, so you can add an extra scoop of vegan ice cream to your plate with this one! Make it gluten free by swapping the plain flour with coconut flour.

Vegan Apple and Rhubarb Crumble Recipe

  • 3 large granny smith apples, peeled, cored, cut into thin wedges (or 500g)
  • 1 bunch rhubarb, without leaves, cut into 2cm lengths (or 450g)
  • 2 tablespoons coconut sugar
  • 1 tablespoon water
  • ¾ cup rolled oats
  • ⅓ cup plain flour
  • ¼ cup coconut sugar
  • ½ teaspoon nutmeg
  • ½ teaspoon cinnamon
  • 1 tablespoon maple syrup
  • 1 tablespoon nutlex, or other vegan butter
  1. Preheat the oven to 180 degrees celsius
  2. Combine the filling ingredients directly in your greased baking dish. Cover with foil and bake for 20 to 25 minutes or until fruit is just tender
  3. Meanwhile,for the crumble, combine oats, flour, sugar, nutmeg and cinnamon in a bowl, mix in the maple syrup with a spoon and then, using fingertips, rub butter into flour mixture
  4. Sprinkle the crumble over the filling and put back in the oven uncovered for a further 20 minutes
  5. Serve with vegan ice cream
